How about a chip that provides a 0-10V output from stamp serial out
that can be scaled as needed? Has anyone ever used anything like
this, or have any Ideas?

0-5V. A PAK-V will do the same thing, but 8 channels at a time while the
Stamp program is still running.
It is pretty easy to make a x2 op-amp buffer that converts 0-5 to 0-10. The
only issue is that with 8 bits of resolution, you get 5/256 = 19.5mV/step.
If you x2 you get 10/256=39.1mV/step.
The PAK-8 can do PWM (with a little math) in 16 bit steps. So then you get
something like 5/65536 or 76uV/step in theory (x2 would be about
152uV/step). However, at that small level, you may be dominated by system
noise any way.
