Has anyone used a SFR08 sensor at temperatures greater than normal?

    I haven't, but I wonder if -- considering the short range of the device -- that you'll see troublesome changes in the return value for a given range. Perhaps a bit of emperical testing is in order.

    Where does one get the SRF08 from? Parallax sells the 04 but not the 08, and would anyone mind explaining the differences between the two?

    The -04 and -08 use the same acoustic elements. The difference is in the host interface: the -04 uses a pulse-width output and the -08 uses I2C. The advantage of the -08 is that it can be bussed with severl other sensors, and it handles the calculations for you. You can get them from http://www.acroname.com.
