Capturing Parallel/SPI/I2C data sent to LCD module and convert it to video image?

Hello.
In educational field, there are a lot of lab equipment which use common, monochrome display modules, based on KS0106, ST7920 and other, common controllers. These are interfaced via 8 bit or I2C/SPI interfaces. There is a need to display data from these screens on a larger screen, so bigger audience can see. Currently, there's industrial camera with VGA output, hooked to projector is used. This is not so cool, there's some flickering, reflections, etc.

So my idea as follows, since data format sent to these display modules is well documented, maybe there is a way to write a software for propeller, which will capture the data going to that display module (module stays in place), and which will re-create output on propeller's VGA output, for further use?

Has anyone done such thing?
