Interested in making a system monitor For desktop PC’s using a P1 and inserting it in an external 3.5” drive bay. What would be the best way to do this? I am pretty sure I would need SATA if not internal USB.

Depends on what you want to monitor. If it's things like temperature, voltages, currents, etc. an SD card might be the way to go. Another thing to consider is using the PC's internal drive bays and power connectors to power your monitor board. You could also connect the USB port on the monitor board to one of the PC's USB connectors and have it log the data on it's drive. Of course you would want a battery backup for the monitor and local storage as well in that case.
