Have you tested with the tc's outside the oven, not using the metal braid, different power supply. I would have .1 caps at various points on the busses on the breadboard.

Yeah, I like the looks of those little boards and the price isn't bad.

That is why I got them. I did not want to spend $15 or so, to find out the chip is a cheep knockoff.
What appeared to be identical between the board I was able to find and the one you have is the conditioning between the reference junction (t/c connection) and the chip. However, I see that C1 and C4 are not populated. Wonder why? These are caps between each leg of the t/c and gnd. It looks like there are solder pads on the backside. Somebody could add those if they wanted.

There are pads for C1 & C4, but there is nothing there. The only thing I can think of that there was a design change, and they found out that the caps were not needed. No need to redesign new boards just to remove 2 caps

No I haven't, because I found the problem. I grabbed a hand full of high temp thermocouples from work and started placing them everywhere in the oven. All the thermocouples I added were showing around the same temps. I also confirmed the Omega unit was correct by putting a thermocouple in boiling water(100.0°C), and in a ice bath(1.1°C). When I connected the thermocouples that came with the Maxim modules to the Omega unit, the temps were way off. I ripped them out, and placed the high end thermocouples in there place. Right now, the oven is set to 200°C, it is hovering around 199-201, and I unplug the thermocouple from the Maxim module, and put it in the Omega unit I am seeing 203°C. I am ok with that error.

THANK YOU EVERYONE! You all were amazing trying to help me figure out why I was getting such a bad error.
