TC74 temperature Sensor -installation ideas/methods

Heya folks,

I'd like to get your ideas on some spiffy ways to mount a Microchip TC74 temperature sensor in the TO-220 package. http://www.microchip.com/wwwproducts/Devices.aspx?dDocName=en010749

The sensor will ultimately be used to monitor the temperature in a cooler. I've thought about using a thermowell through the side of the chest and inserting the TC74 and some thermal compound inside the thermowell. The sensor leads would be soldered to shielded control cable conductors. However, this method of installation brings up a few questions.

1- What kind of thermal compound to use? It needs to displace moisture, be dielectric and function well as a thermal compound.
2- How do I protect the sensor/pins? Heat shrink tubing? Epoxy coating? Something else?
3- What do I do when the cooler has no beer left in it? ;)

Any thoughts or ideas will be greatly appreciated! I'm not set in stone about using a thermowell, so lemme hear your recommendation. :)
