using the most inexpensive here, the boe-bot, could I actually strip down a cheap rc car and have the boe-bot push that instead of the other wheels? to me it makes sense as long as weight is taken into consideration..so am I off or would it work?

    Two completely different animals. The BoeBot uses two continuous rotation servos and differential drive. An RC car uses a DC motor and speed controller to drive the rear wheels and a regular servo for front wheel Ackerman steering.

    You could certainly control an RC car using a BS2 and Board of education, but the hardware, execution, and mobility would be very different from a BoeBot.
