    The ones on the right could work -- hard to know as we don't know what kind of sensors you are using, what kind of LEDs, how big the wheels are, etc. Try it and see -- the test rig will be about the same so you won't lose much trying. Scavenging slot interrupt sensors from an old optical mouse would probably work well -- the disks inside the old optical mice have very very fine slots and the sensors work fine. A regular IRED and detector (like for a remote control) will probably have to wide a focus for something small.

    I would be using 4 vishay tcst 1103 sensors

    it says the appature width is 1mm, Ill see if I can somehow get one of the kind of the right temporarly mounted on the back shaft of the motor and then feed the sensor power and hook the outputs up to a scope

    Why mount it on the motor? Rig up something on the bench that lets you try out the disk and sensor -- if you can't get it working OK on the bench, it'll be even harder on the motor where alignment and such will be trickier. A dowel, a pushpin and some tape and you can have something that at least lets you spin the disk by hand and see if you get decent pulses.
