How to use ADC

Hi, I am working on a project where I want to use an accelerometer to move 2 servos. The accelerometer I bought is analog 0-5v and I bought some ADCs with it to convert it to digital. I am not familiar with ADCs at all and I would like to know if anyone would be able to explain to me how it would have to be wired and a short piece of code of how to read it. Download (for free) and read the following manual (http://www.parallax.com/Store/Education/KitsandBoards/tabid/182/ProductID/307/List/1/Default.aspx?SortField=ProductName,ProductName). It has all the information you'll need to use the TLC0831 or ADC0831 with the Stamp.
