Or too much sail for the wind strength/direction, the crew were too slow to move about(the crew also acts as ballast to compensate for the lack of a heavy keel).

Showing my Kiwi bias here but it looked to me like as Oracle started a turn a trough opened up just in front of the bow. Whatever the reason, these boats are amazingly fast.
That looked rather easy to do;
It did not look like the sea was too rough - maybe not enough fore lift in the hull designs ?
Plenty of lift in those hulls, other videos show the boat floating on just the first ~1/6th of the two hulls.
@max72: Foiling? sweet! I love how much harder the chase boat has to work after the second hull starts flying! Looks like a delicate balance though, needs an "elevator" on the rudder or something before mere mortals can do that.
