First crack at an LCARS interface ended in failure: http://forums.parallax.com/showthread.php?101965
Was going to wait for Prop 2 to try again.
But, decided to try again with two new friends: SSD1963 and VNC2
The SSD1963 allows me to output 640x480x24 bit to a 17" touchscreen display.
The VNC2 allows me to get the touchpanel data over USB cable.
This is still a work in progress, but I think you can see from this video that it might work:

Need to work in increasing update speed and also need to get the proportional LCARS font working...
