I was looking into building a board for the propeller with 4 0-10vdc analog outs PWM-filter-opamp type setup. My question is should I go for the 4 layer board? I have not done much analog work so I am not sure of the benefits. It would seem to be less noise prone with ground and power planes. I would also pour a ground plane around the analog traces I would suppose to separate from the digital parts of the board.

I was looking at PCBExpress mini board 3 boards 4 layers for 98 bucks.

    In the past I have had good luck with 2 sided boards. All I did was make a Wide ground trace (.188) around the edges on both sides with through holes at each corner for screws.

    A two-layer board should be adequate. I would put a groundplane on the underside and use that side sparingly for traces. Once you're done, be sure to trace all the return current paths through the groundplane back to the power input to make sure there aren't any blockages or excessively circuitous routes.

    I also think you'll be fine with 2 layers. Groundplane is a very good idea.
