Wheel Encoder Suggestion for a Quad Rover

Any suggestions on methods to add a wheel encoder to a Quad Rover? It will be running navigation courses (e.g. bearing & distance in field) as a learning tool for scouts learning piloting, so plus or minus a foot (one rotation) out of a hundred would work nicely. Has anyone retrofitting a pre-made encoder unit and if so how?

You could add something like a QTI (IR reflective sensor) sensor looking at the spokes of the disc brake. That would give you eight counts per revolution. Or, use the holes in the perimeter of the disc for even greater resolution.
