Sonar mapping on circle grid

Hello, I am working on a project using a sonar on a spinning stepper motor and want it to map out what it sees. We have the sonar (SRF04) reading values perfectly and recording the values using the WRITE command, what we're unsure of is how to go about mapping this onto a "grid". We don't need to display it yet, but eventually we'll try to get it onto the debug menu and then onto an LED display which we just ordered.
The sonar is mounted onto a stepper motor, so we always know what step it's on. It does a full 360 and then reverses back to its starting position.
We've been brainstorming several idea's, but I just want to know what others think would be the best way to do it.
