Has anyone seen ThereminVision in action?
This looks interesting as it is an object detection system that uses Theremin to sense the capacitance of objects: http://thereminvision.com/

I just wanted to see a video, but no luck so far.
There are specialty ICs that do all the oscillator stuff (like http://www.sparkfun.com/products/7902) and playing with the antenna and loading coils can extend the range. Aluminum foil works well. This guy did some interesting stuff: http://www.nerdkits.com/videos/halloween_capacitive_touch_sensor/
If you have a Propeller QuickStart you can see how the metal stripe on the back makes for a good close-proximity detector. The QuickStart even knows when it's resting on your table!
