    If you provide them with a source of infrared light. If it's dark, there is no ambient IR light unless it is provided artificially.

    I would use the IR LED's and the IR Detectors, but the whole system will b in an enclosed box with no external light added, will they still work

    If you are talking about Passive InfraRed detectors (PIRs) like the one shown in the link below, then the source of the IR light is something like a human body or an animal, which emits IR as heat. As long as there is a body walking around, then these PIRs could detect it even in otherwise total darkness. If you are talking about other forms of IR, like those forms of IR closer to the visible spectrum, then normal PIRs will not detect that, but instead you need other kinds of IR detectors which will require IR emitters (IR LEDs) to provide some kind of IR light source.
