Hello,

Does anyone know off-hand if an Ultrasonic sensor will function on a liquid object such as oil or water?

You have to be careful about getting either water or oil on the sensor. The air-water or air-oil interface will reflect the ultrasonic pulse, so you could use it to give a rough measurement of liquid level. The tank needs to be relatively still so the liquid level isn't shifting during a measurement and, again, you better not get liquid on the sensor.
