Why such large output capacitors on PE Kit board?

I understand (at least mostly) why output capacitors are necessary on voltage regulators, but I'm not clear as to why the capacitors on the PE Kit board are of such a high value. I'm used to seeing anywhere from 0.1uF to 10uF output capacitors, so I'm confused as to why the PE Kit board uses 1000uF capacitors. Can someone help me understand the electronic reasoning why this value of capacitor is used in the PE Kit circuit?

    Although the regulators are stable with much lower capacitance, the large caps are necessary when there's a possibility of running servos or other high-current DC loads. They help to prevent momentary voltage sags during current transients.
