use of the parallax pink module to convert udp to rs232

Hello-
Would it be possible to implement the parallax pink module to take an incoming udp signal and convert it to rs232? I build underwater robots, and due to tether lengths, standard serial communications do not work very well. I have had good experiences using the make board, which uses OSC over udp. I would like to move to a parallax propeller based system, using communications over ethernet.
