Special Sensor application i need help with.

Here is what i need to do exactly and i don't mind getting creative or keeping it cheap. Keep in mind that an actual weight value (XX lbs) is not important. I am building a floor grinder with adjustable head pressure(basically sandpaper with adjustable down pressure). I am mounting it at two points opposite each other which is where i want to put the mystery sensors. I need to know which side of the "sandpaper" has the most pressure that way i can make adjustments. In my application heavy down pressure is involved. I want to be able to calibrate the sensors(zero them out) before each grinding job to improve accuracy. A few ideas i have heard are load cells, linear potentiometers, capacitive transducers. Being better at the building rather than the electronics i need someone with the knowledge to come up with an idea and explain it it simple terms.
