the frequency of these watch xtals?
Could that tweak it both faster and slower? or just one
way.
Well the capacitor will "pull" the frequency but the range is limited. If the circuit is designed for an external loading capacitor then it "should" work a little both ways. Personally I find that variable caps and resistors are not very stable so I'd rather have a software calibration so it may be that the software ends up adding so many seconds per day from a starting point for instance. But that isn't much help either because the temperature goes up and down usually. If you want a stable and precise time you could always read the time from a GPS module (I do).
