Dallas DS18S20 Temp sensor

I'll give you a little background first- I have a control board that controls a simple refrigerated machine and utilizes this Dallas device to read and monitor the temperature.
So here is what I am throwing out here for the board to discuss- Do you think it is possible to monitor the data coming from the sensor by just piggy backing the data line off the control board· / sensor data·terminal? My stamp could watch for the Read Scratchpad command (BEh I believe) and then display the reading seperately but in tandem with the control board. My question is- is it possible·or has anyone·read a sensor this way by ignoring the commands that the control board sends and only pay attention to the data coming from the Dallas device and "share" this connection?
