Help! feedback sensors

I'd like to sample voltage and current in all three legs of a three phase motor. A decade ago I did this with a PC on the ISA card, but at the time I'd never programed a PLC or micro-controller. Also I was doing post process in MATLAB instead of real time processing for control on chip. The Propeller looks like it has both enough cogs, clock rate, AND enough I/O to make this fun. For a three phase test motor running on 240 I assume I need a 0-400 volt A/D chip and hall effect current sensors also feeding A/D chips. I'd like to opto-isolate my on-motor board from the multi-micro-processor (MMP?) board. I haven't used I2C chips yet but will when they can keep up. As an old mechanical my EE knowledge is picked up peicemeal. I've noticed that many lifetime experience EEs and ITs haunt these forums.
