Adjustable Power Supply

Does anyone know of a quick and easy way to make an adjustable DC power supply? I have several 12V DC power supplies, but need to drop them to around 7V. I was thinking of a Zener Diode connected to a potentionometer, but not sure if i will end up blowing something out!!!! Thanks for the help.

These are dirt cheap and have been around a long time, it will work up to 1.5A, I don't know what your current requirement is, but hopefully this will work for you.
