what components do i need to measure and display a pitch and roll of an stationary component, meaning that i would place it in a box and move it to get some readouts of pitch and roll.

I think but im not sure that i need an microcontroller,an accelerometer, a display??? i need help!! oh and if i do use a microcontroller, can i use my mac computer ??

i dont know about the mac computer, but you can use a propellor and a wii nunchck to get pitch and roll, i use this set up and a display from 4d systems. i use the nunchuck as "mouse" to controll a pointer on the display, it works and there is already an object written to read a nunchuck

Sounds like a job for an accelerometer.
Here's some stuff I've done in the past using Analog Devices ADXL series with a PIC
