Is it possible to do this with a BS or SX? And if so, what type of "sensors" would one need?

There's all kinds of information on the internet on this. Start with a search for "diy eeg". The frequencies involved are low enough that a BS or SX could do some analysis. Neither has a lot of memory for holding the data, but you can always add external hardware to do so. The BS is not very fast, so it can't do much in real time. The SX is much faster, but still doesn't have a lot of built-in storage. A better choice might be a Propeller.

But if you don't think real fast, the Stamp might be okay, right?
