Is there a way to use the PSC (USB version) and have it mapped to the X and Y coordinates of a computer mouse so when one moves the mouse on the x plane, servo one moves. And when one moves the mouse on the y plane servo two moves?

Yes, but you would need to write a program that runs on the computer to get the data and then sends the changes to the PSC.
