Audio app ? for the propeller

Hello all,
I'm teaching a HS Capstone engineering class and one of my groups wants to simulate a wind instrument. The kids were taught the WAM and BOE-BOT texts. I think the propeller can do what they need - 12 keys in any combination and they'd like to mix the output with an (analog?) signal to modulate the notes and get that breathy sound. ANY pointers in that direction would be very helpful.
Several questions:
1) They know Pbasic, will they be able to use a version of basic to program the propeller adequately?
Or should they use a different language/IDE?
2) Are there any objects available that can do some of this? This project may be more than they can handle themselves and I have no experience with the propeller.
3) Is there a solderless breadboard adaptation for the proto board. They're trying to build the education kit (entirely breadboard) and keep frying parts - I'm ready to jump out a window.

It has the I/O connected, a small breadboard, and 8 open I/O connections.
