I got that Stamp 2 OEM board and want to mount it horizontally on a breadboard instead of vertically.
I tried googling for a 20-pin SIP right-angle socket, but am having a hard time finding something.
What is the correct terminology for such a part?

"Socket" is what they plug into.
Click on any of the 3 datasheets shown.
Often times if you go to digikey.com and experiment with keywords you will eventually find the part you need. Their catalog is a good thing to have on hand as well, and is often easier to find parts.
search:
female header socket
then you can narrow your search after that with pin spacing (pitch), pin dimensions, etc.
