Sorry for so many questions.....
1. Can the Propeller switch between CMOS and TTL input levels like the SX?
2. For the Propeller ADC, do we need 2 IO pins like the SX as well?

1. For TTL inputs (5V) you can just use a sufficiently sized resistor for most things. See the hardware sticky thread.
2. See the demo board schematic for the circuit or get an ADC chip. You could even use a TWI one and then you could just the pins that connect to the eeprom.
