What type of sensor would one need to detect EMF levels?

What sort of EMF levels do you want to detect? The type of sensor you might use depends entirely on the kind of EMF you want to detect, the power, the frequency, etc.

Power only. Say something that could detect high EMF levels around a house due to poor electrical wiring, etc.

Start with the Wikipedia. Do a web search for "wiki EMF meter" and that will get you started.

The main types of magnetic field sensors are Hall effect and a loop antenna of some kind, often wrapped on a ferrite core or rod.

If you make your own, your main problem will be calibrating it. It's easy to detect 60Hz EMF.
