The IRF840 may or may not work for your task in that it's designed for a higher gate voltage than the Stamps can provide
(5V). It will switch some current with a 5V input, but it won't saturate. There are graphs on the datasheet for the device
that show the relationship between gate voltage and drain current.

There's a corresponding line of logic level MOSFETs with the number IRLxxx. Have a look at them.
