BS2e or higher and external EEPROMs

I see that the BS2e has 38 Bytes RAM and 128 Bytes SCRATCH RAM.
I may need MORE! Potentially up to 5KB RAM or more. Can the BS2e
and higher communicate with an extra EEPROM?
If so, how? I don't need a full explanation (unless you want to),
just directions to a reference (Parallax App Note or other stuff)
that shows how to do it.
Is there a max on how big of EEPROM the Basic Stamp(s) can access,
assuming they can?
