Inverting values

Hi everyone, hopefully someone has a simple solution to my problem. I have values from 700-2100 that are constantly changing, the values are read on one pin and then sent on another.
occasionally when 700 is read I need to send 2100, or when 800 is read I need to send 2000, 1300>1500 etc.. is the a command or simple way to do this?
