What's the advantage of having them?
Should I do front and back of board?
Solid or hatch pattern?
The board is a 1 channel EMG op amp circuit.

    Typically this is done to minimize the amount of copper that needs to be removed.  It depends on if the fill is attached or floating islands.  If attached and used as a ground plane it can provide shielding.  Solid fill obviously means less copper removed, and provides good shielding at all frequencies where hatch can allow some signal to pass, but for the most part provides good shielding as well.
