what is faster·to use with a stamp,·a serial or a parallel lcd?

You won't be able to tell the difference -- serial LCDs using fewer I/O pins and don't require standard initialization (handled by the onboard controller). On the other hand, using a parallel display lets you read from it, so you can use the CGRAM and unseen display RAM as storage space if you're in a pinch.
