Just some info in case someone else has this question:

To set-up the Professional Development Board video output to match the Demo board (which a lot of the available code is written for) connect the following pins to the composite out(RCA) connectoid with jumper wire:

RCA connector Propeller pins
----------------- ----------------
VA ------------------------ 13
V2 ------------------------ 14
V1 ------------------------ 15
V0 ------------------------ 12

Most people do not use the baseband for the composite video so you can save wiring pin 15.
